Mediterranean Carrot Salad

Ingredients
1/2 pounds carrots, peeled2 tablespoons extra-virgin olive oil2 tablespoons fresh lemon juice1 garlic clove, crushed1 tablespoon chopped fresh mint1/4 teaspoon kosher salt
Directions
With a box grater, mandoline, or food processor, coarsely grate carrots. Combine with remaining ingredients and toss to coat. Chill or serve room temperature.
