Chicken With Mushrooms & Cream

Ingredients
1 cup sliced mushrooms1 cup diced onions5 Tbsp unsalted butter4 boneless skinless chicken breasts1 cup chicken stock/broth1 cup dry white wine1 cup heavy whipping creamsalt & pepper to tastelemon juice
Directions
Pre-heat oven to 400 degrees. Add butter, onions, and mushrooms to an oven proof skillet over med-high heat. Sprinkle lemon juice, salt & pepper over the chicken breast. Add the chicken breast to the pan with the mushrooms and onions, rolling them to coat with the butter. Cut a piece of wax paper to fit on the inside of your skillet and butter one side of it. Place the buttered side of the wax paper down over the chicken and then cover the pan. Add the pan to the oven and finish the chicken. This takes about 8-10 minutes. Make sure the chicken reaches 170 degrees. Removed the chicken and set aside. Place the skillet on high heat and at the chicken stock and white wine. Cook this down very quickly until it starts to thicken. At this time at the cream and cook it down until the sauce begins to thicken again. Add the chicken back to the pan and coat wtih the sauce. Makes 4 servings.
