Orzo and Asparagus side dish

Ingredients
1 cup orzo2 T olive oil3 gloves garlic, finely chopped1 pound asparagus, cooked and trimmed diagonally3/4 tsp saltlemon zest1 T lemon juice1/4 cup shredded Parmesan cheese
Directions
Cook orzo according to directions. Heat oil over medium heat, add garlic and cook until softened (about 3 minutes). Add asparagus and heat about 2 minutes. Stir in orzo and salt.

Remove from heat, add lemon zest, lemon juice and cheese.

Serve hot, at room temperature, or cold.

    I like this recipe hot or cold, but eating it cold is my favorite. I usually serve it over some baby greens. I also add 1/4 cup chopped onions when cooking the asparagus. Delish ! - 6/27/10
