Paula's Awesome Taco Casserole

1 lb. 93% lean ground beef1 15 oz. can tomato sauce1 15 oz. can dark kidney beans2 cups Iceberg Lettuce, shredded or chopped2 medium fresh tomatoes, diced1 pkt. McCormick Chili Seasoning (I use Original, it comes in Mild & Hot also)1 1/2 c. Shredded cheese (use more or less as you like)1 small can sliced black olives1 bag Fritos corn chips
Brown ground beef, drain. Mix in tomato sauce, kidney beans and Chili seasoning pkt. Simmer on low for 10-15 minutes.
Spread Fritos in bottom of an 8 x 11 casserole dish. Pour Chili over the Fritos. Top with lettuce, tomatoes, black olives and cheese.
Serve with sour cream or salsa if desired (not included in nutritional information).
Best if served immediately after preparation.

I used groud turkey instead ( I'm only allowed red meat two times a month. I honestly can not taste the difference. I used redduced sodium chips and homemade chili powder to reduce the sodium, and cut back on the olives (same reason). I had to make do to my and my husband diet restrictions. - 10/1/07
