Chicken and Butternut Squash Soup

2 tbsp. olive oil6 cloves garlic12 oz. Mirepoix Style Blend (I used bag of Kroger brand)2 cups frozen spinach3.5 oz chopped baby bella or portobella mushrooms1 12 oz. can canned chicken breast1 25.5 oz Dave's Gourmet Butternut Squash Pasta Sauce(I found this delicious jarred sauce at Costco)2 cups low sodium/low fat chicken broth1 15oz can white kidney beans (I used Trader Joe's)
Heat 2 tbsp olive oil in large soup pan. Add chopped garlic and chopped mushrooms, saute for 2 min. Add mirepoix, spinach, chicken, pasta sauce, beans and pasta sauce. Bring to light boil. Cook for 20 minutes stirring occasionally. Makes 8 1-cup servings.
