Cauliflower Fennel Soup

Ingredients
1 head cauliflower, chopped1 bulb fennel, chopped2 Carrots, chopped3 stalks of celery, chopped1 onion, chopped10 cups chicken brothsaltpepperhot pepper flakes
Directions
Saute onion and fennel until softened. In a large stock pot, place all ingredients, and cook until everything is soft. Puree.
Makes 8 - 2 cup servings.

    I made this today! I have everything on hand to make this dish. delicious! Might throw a few potatoes in it and pass it off as 'potato soup' to the family. (They would eat it then.). Any way to sneak a few more veggies in! - 3/24/13

    this is a keeper. Just really tasty. It is just loaded with nutrients and I was happy to see lots of pottassium which I usually have trouble getting enough of - 4/1/11
