Vegan BBQ Tofu & Veggies

Ingredients
Directions
1 package Extra Firm Tofu (350g)1 yellow pepper1 red pepper1 green pepper1 portabello mushroom cap (or 2)2 tbsp ketchup3 tbsp bbq sauce1/2 cup tomato sauce
Drain Tofu and slice into chunks or strips. Place in a tea towel and put something heavy on top to get all the excess moisture out. (20mins-2hours), This isn't necessary but helps the tofu to be able to absorb more flavor.
While you, wait, cut and wash the veggies into strips. Preheat oven to 375
Find a baking dish, about 8x8, and mix the sauces together, then add the strips of tofu, and the veggies, mix it up so they are coated nicely with sauce.
Bake at 375 for about 1-2hours, depending how firm you like your tofu, and check & mix up often.
Then enjoy!
My family loves this, my mom thinks the tofu tastes like bbq chicken or ribs, and she usually hates tofu.
Variations.. someimes I like my tofu really chewy and firm, so I drain & freeze and defrost the tofu first, which changes the texture, and also sometimes I halfly sautee the veggies and place the tofu & sauce in a loaf pan and give the tofu a headstart on cooking and adding the veggies after a half hour or an hour into cooking.
