Ma's Irish Soda Bread

Ingredients

4 cups flour1 tsp salt4 tsp baking powder1/2 tsp baking soda3/4 cup sugar1/4 cup butter1 cup raisins1 cup dried cranberries(sweetened)2 large eggs2 1/4 cups buttermilk
Preheat oven to 350 degrees.
In a small bowl, lightly beat eggs and buttermilk until mixed.
Combine all ingredients in a large bowl adding the egg and buttermilk mixture last. Stir by hand until the batter is well mixed.
Pour batter into a greased 9" spring-form pan and bake for 1 hour.
This recipe makes 1 loaf which is then divided into 24 slices.
Optional: Soak raisins and cranberries in rum (or water) overnight to have plumper fruit.

This was the tastiest soda bread I have ever eaten. Mine was ready at 45 minutes! I did not have dried cranberries so I only used raisins and just used the 1 cup. Found the recipe just before I wanted to bake and soaking while prepping worked just fine. Will definitely make again! - 3/13/11
