Old Fashioned Ginger Cookies

5 Cups Flour2 Tsp Baking Soda1 TBSP Ground Ginger1/2 Tsp Ground Cinnamon1/2 Tsp Ground Cloves3/4 Cup Canola Oil (or 1 cup Butter)2 Cups Sugar2 Eggs Beaten1/2 Cup Molasses2 Tsp Fresh Lemon Juice
Makes approx. 12 dozen Cookies. Preheat oven to 325F.
Sift together Flour, Baking Soda and Spices.
Cream together Oil (or Butter) and 2 Cups of Sugar.
Stir in beaten Eggs, Molasses and Lemon Juice.
Add Flour mixture to Sugar mixture and blend thoroughly. Shape dough into 3/4" balls. Roll in remaining sugar and place 2" apart on greased cookie sheets. Bake for 12 minutes until just firm to the touch. Cool on wire rack.
