Balsamic Carrot Salad

Ingredients
4 cups (1/4 inch thick) slices of carrot (about 2lbs)1/4 cup minced fresh cilantro2 tablespoons white balsamic vinegar1 tablespoon extravirgin olive oil2 teaspoons minced fresh oregano1/4 teaspoon salt1/4 teaspoon black pepper2 garlic cloves minced
Directions
Combine all ingredients in a large bowl, tossing to coat carrots. Cover and chill at least 1 hour or overnight to enchance flavors.

    These carrots were great! I steamed them a bit and then chilled in an ice bath before marinating to give them a little tenderness, and used fresh thyme instead of cilantro and oregano, because it's what I had on hand. Marinated for about 12 hours. Would be great served hot or cold. - 5/13/10
