Ingredients
2lb lentils1 med. onion1 can tomatoes2 tbsp EVOO3 tbsp ham soup base (omit for vegetarian soup)salt & pepper to taste10 cups water
Directions
In a large stock pot, brown onion in olive oil. Add remaining ingredients and simmer for 30-40 minutes or until lentils are soft. Serve with a dash of balsamic vinegar or parmesan cheese.
