Chicken, Sausage and barley soup

Ingredients:½ cup uncooked barley2 cans chicken stock2 cans Campbell's Chicken Barley Soup1 can Campbell's Cream of Chicken Soup(optional)1 can corn2 boneless chicken breasts(cut into small cubes)3 diced Andouille sausages1 diced medium carrot1 small white onion, diced1 garlic clove minced¼ tsp chili powder¼ tsp ground ginger½ cup pepperoni cut in thin strips¼ cup diced sweet red pepper¼ cup diced green pepper1 Small slice, jalapeño pepper, diced¼ tsp. Paprika2 bay leaves (while cooking)
Marinade chicken overnight (I use my own Cajun spices). Grill
chicken & sausages to liking. Combine all ingredients including meats
in slow cooker on high for 2-3 hours stirring occasionally.
simmer or low for additional 2 hours.
For an interesting touch, add a few cubes of cheese in each bowl
before serving. (I use pepper jack.)
