Mardi Gras Chicken Salad

Ingredients
1 whole chicken breast, grilled and chilled2 small (4-inch) stalks of celery, finely chopped1/2 slice of purple onion, finely choppedKernels sliced from one small ear of cooked corn on the cob1 Tbsp. Kraft Light Miracle Whip Salad Dressing1 tsp. Dijon Mustard2 cups fresh spinach leaves
Directions
Cut chicken breast into small cubes. In a medium bowl, toss chicken cubes with celery, onion and corn. Stir in Miracle Whip and Dijon. Serve over a bed of fresh spinach. Optional ingredients are pecans, raisins, fresh grapes or chopped fresh apple.
