Broiled Open Face Tuna Sandwich

Ingredients
1 can albacore tuna, drained1 cup celery, chopped1 cup red onion, chopped3 slices beefsteak tomato3 slices whole wheat toast3/4 cup shredded cojack cheese3 tbsp light mayo2 tsp dijon mustardsalt and pepper to taste
Directions
Preheat broiler. Drain tuna. Combine with celery, onion, mayo and mustard. Salt and pepper to taste. Top each slice of toast with about 1/2 cup of tuna mixture, one slice of tomato and about 1/4 cup cheese. Place in a broiler safe pan. Broil on top rack for about 3-5 mins. or until cheese is melted. Serve immediately. Makes 3 servings.
