Couscous Vegetable Medley

Ingredients
1 tbsp canola oil 1 each: onion, carrot and stalk celery, chopped 1/2 red pepper, chopped 1 cup low-sodium chicken broth1 cup couscous1 cup frozen peas
Directions
Heat oil in skillet. Add onion, carrot, celery and pepper; cook 5 min. or until tender.
Add broth; bring to boil.
Stir in couscous and peas; cover. Let stand 5 min. before serving.
