"Sloppy Joe" with Veggies over Rice

2 cups Spinach, frozen1 package Mixed Vegetables, Oriental Blend1 can Canned Tomatoes (I used tomatoes with peppers)1 can tomato paste2 lbs. ground turkey4-8 tsp. Louisiana Hot Sauce (to your taste)2 cups Brown Rice, uncooked1/2 cup shredded cheese (cheddar, or your preference)
VEGGIE MIX
Heat mixed veggies and spinach with a small amount of water. Add 1/2 can tomato paste. Add canned tomatoes. Add spices of your choice (oregano, black pepper, paprika, garlic, and dash of salt work nicely). Continue to simmer on low to allow any extra water to cook off.
TURKEY
In a skillet, brown the turkey. Add 1/2 can tomato paste and Louisiana Hot Sauce. Add any other spices you want (I used garlic and oregano).
RICE
Cook 2 cups rice in 4 cups water on medium-high until the rice has expanded and is tender when you bite it, and all water has cooked off.
FINISHING OPTIONS
* In bowls, layer 1/2-2/3 cups rice, then 1/2-3/4 cups veggies, then 1/2 cup turkey, then top off with a sprinkling of shredded cheese.
*In large pot or serving bowl, combine rice, veggies, turkey, and cheese. Mix well, then serve.
*In casserole dish or pyrex bowl, combine rice, veggies and turkey. Mix well, top with cheese, then bake 20-25 mins. at 350 degrees.
*Instead of cooking rice, layer a bit of veggies and turkey on a whole grain roll for a Sloppy Joe sandwich. Another option for sandwiches is to puree the veggies and add to the turkey as a sauce.
