Vegan Chickpea "Tuna" Sandwich Filler

1 can organic garbanzo beans, drained and rinsed3-4 Tbs non-fat vegan mayo (I like Nayonnaise)1/4 cup sweet pickles, diced (or 3 TBS sweet relish)kelp powder (to taste, optional)fresh ground pepper to tastesea salt to taste
Mash the garbanzo beans so that they are well broken up. Don't mash them to death, though, you want some texture - not hummus. ;) Add vegan mayo (more or less as you prefer) and the diced pickles. I also add a splash of the pickle brine, as I've always really loved pickle-y tuna and like pickle-y untuna, too. Add a dash of kelp powder, salt, fresh ground pepper to taste.
Chill until cold (I find it tastes better chilled and this gives the flavors time to mingle) and serve on your favorite bread or stuff inside a toasted pita. Delish!

I didn't have pickles so I played with this a bit:
Added tsp spicy mustard, Taragon, Thyme, Onion Powder, and Gomasio (instead of kelp powder).
Really quick! Really Tasty!
I might even make a big batch and serve it as an appetizer with pita wedges at a bbq I am going to this weekend. - 5/28/10

Wonderful! Thanks for the review. I've started stuffing mine into toasted pitas with tons of sprouts. So delish for a quick lunch at work.
