Sweet and Sour Cucumber Tomato Salad

1 large tomato, cut into chunks1/2 average cucumber, thinly sliced1/4 cup finely chopped onion1/4 cup rice vinegar1 T Splenda2T fresh cilantro chopped (optional, but VERY yummy!)2 tsp extra virgin olive oil (optional)salt (optional) and pepper to tastered pepper flakes (optional)
1. Cut tomato, slice cucumber,and chop cilantro.
2. Toss veggies with vinegar and Splenda.
3. Add salt, pepper, and red pepper to taste.
*Rice vinegar, which has a lighter and sweeter taste than other vinegars, is perfect for this recipe. It is also lower in calories than some varieties of vinegar. In a pinch you can substitute white vinegar. Do not use balsamic vinegar. It will drastically alter (and overpower) the subtle flavors of this recipe.
*Please Note: The cilantro, olive oil, red pepper, and salt are all optional. The nutrition information is calculated the way I usually make it: with cilantro, but without the other optional ingredients.
