Country Fried Potatoes with Smoked Chicken Sausage

1 pkg Hillshire Farm Hardwook Smoked Chicken Sausage2 baking potatoes (750 grams)Onion PowderBlack Pepper1 Tbsp butter1 Tbsp Olive oil
Wash potatoes, cut into quarters and cook in microwave on high for 8 minutes. While they are cooking, slice the sausage. Heat sausage in large non-stick skillet while potatoes are cooking. When microwave is done, slice potatoes into 1/2 inch slices. Remove sausage from pan and melt the butter over med high heat. When melted, add the olive oil. Butter & oil should be simmering lightly. Add the potatoes to the pan, toss to coat with the butter/oil mixture, add onion powder & black pepper to taste. Add the sausage back to the pan and let cook for 5 minutes without stirring, to crisp the potatoes. Toss or flip the mixture after 5 minutes and let cook on the other side to finish crisping. Very filling, very satisfying.

SINDLICIOUS
Since prepared sausage have a lot of sodium and most times a lot of fat, why not make your own sausage from scratch! Then you can control what's in your sausage with lean ground meat. I made my own out of necessity since I can't get "American" or "Italien" style sausages in Sweden! - 1/9/09

I found some cajun chicken sausage at Sunflower Market which was really really good in this recipe. I also used butter flavored cooking spray to crisp the potatoes instead of using the butter and oil to cut down on calories and fat. This was amazing and will be in our regular rotation!!! - 5/17/11
