Banana-Flax Fiber Muffins

Ingredients
2 c whole wheat flour1.33 c SMART BRAN1 c applesauce (low sugar or unsweetened if possible)1 c water4 Tbsp ground flaxseed1 Tbsp baking powder1 Tsp baking soda2 Tsp cinnamon.25 Tsp Salt.33 c Sugar free maple syrup1 Tsp Vanilla Extract2 Med. bananas
Directions
Makes 12 muffins (takes less cooking time). This can also be made as a loaf... yummy!

Soak smart bran in water and 1c applesauce in small bowl.

Mix all dry ingredients in large bowl. Add maple syrup, vanilla, and smart bran mixture. Lastly, add diced bananas and gentle mix .

Divide into 12 muffins - bake at 400 degrees.

    I've just made these as I need the added fibre. I did not have maple syrup so used apple juice instead. They were delicious. - 9/21/09
