Light Savory Summer Salad

1 organic cucumber1 cup 1% Organic Small Curd Cottage Cheese1/4 cup unsalted Sunflower Seeds1 cup Cherry Tomatoes1 can wild caught Tuna in water(you may substitiute chicken or salmon)Fresh basil when available
Cut cucumber length wise into fours, then slice into bite size trianges. Place in a meduim size bowl. ( Drain off any excess liquid) Add cottage cheese to bowl. Cut tomatoes in 1/4ths add to bowl. Drain Tuna and add to bowl. Mix well. Sprinkle with fresh ground sea salt, cracked black pepperand garlic flakes. **Add fresh basil when available to give it a refeshing kick!** Sprinkle sunflower seeds to garnish. Makes 2 - 1 cup servings
