Quinoa & Feta Salad

Ingredients
3 cups cooked and chilled quinoaOne can of black beans4 oz light feta cheese3 cloves garlic, crushed1 large tomato, seeded and chopped1/2 cup thinnly sliced or minced red or green onion1 cup seeded and chopped cucumber
Directions
Use cold/refrigerated quinoa. Rinse black beans. Crumble feta. Chop tomato. Toss all ingredients together. May be used as a side dish or main dish for lunch. Enjoy.
