Festive Couscous

Ingredients
3 c couscous½ c golden raisins2 t salt½ t paprika½ t ground cumin½ t ground coriander¼ t ground cinnamon3 1/3 c boiling water½ c pomegranate seeds¼ c chopped fresh cilantro
Directions
Put 3 c couscous in heatproof bowl. Stir in raisins, salt and spices. Pour boiling water over couscous and cover bowl with plastic wrap; let sit 10-15 min until water is absorbed. Fluff with fork. Transfer to serving dish and mix ¼ c pomegranate seeds in couscous and scatter remaining on top. Sprinkle with cilantro and serve.
