Cookies and Cream Mini- Cheesecake

Two 8 oz. blocks light cream cheese (Neufchatel)2 eggs1/2 cup sugar1/2 tsp. vanilla12-14 Oreo cookies
Mix together first 4 ingredients. Separate Oreo cookies, place one half in bottom of foil cupcake liners (just like the paper ones for cupcakes,but made out of foil) placed on a cookie sheet. Place remaining Oreos into a ziplock bag and crush, then fold into cheesecake batter. Spoon cheesecake batter into each foil cupcake liner. Bake at 350 degrees for 15-17 minutes. Remove from oven and cool, then chill in refrigerator. Top with fruit or whipped cream if desire.
Makes 12-14 servings (individual cheesecakes).
