Carrot, onion & sweet potato soup (500g per serving)

Ingredients
2 large onions1 medium sweet potato300g carrots1 tbsp olive oil750ml veg stock
Directions
Chop onion into medium slices.
Fry off in the olive oil.
Chop or dice sweet potato and carrot.
Add sweet potato and carrot to mix, then pour vegetable stock over.
Simmer til vegetables are soft.
Blend in a food mixer til smooth.
Makes a tureen of about 1980g, with nearly 4 500g servings.
Serve hot with some fresh basil sprinkled on top.
