Chicken and Wild Rice

Ingredients
6 chicken thighs, skin and fat removed2 boxes Uncle Ben's Country Inn Chicken and Wild Rice2 cans Reduced Fat Cream of Chicken Soup2 cans water (fill the soup cans w/water after emptying)
Directions
Add rice, seasoning packets, soup and water to 9x13 casserole pan and stir together. Place chicken on top. Bake at 350 for 60-75 minutes until chicken juices run clear.

This can also be done in a crock-pot and can be done w/chicken breast as well for an even lower fat dish. If you use boneless chicken, reduce the cooking time to 45-60 minutes.

Makes 6, 1 cup servings of rice w/one piece of chicken.
