Four Bean Salad

Ingredients
2 cups red kidney beans2 cups chick peas2 cups black beans2 cups black eyed peas3/4 cup red wine vinegar1/4 cup olive oil1 T. sugarzest and juice of one lime1/4 cup chopped cilantro6 oz Monterey jack cheese cheese shredded1/2 t. saltpepper to taste
Directions
Rinse the beans and place them in a large bowl. In a small bowl mix the remaining ingredients for a dressing. Pour over the beans and chill before serving.
