1 c onion chopped.5 c celery chopped3 cloves of garlic chopped2 tsp olive oilSaute above in olive oil and set aside to coolmix together3.5 c brown rice (cooked)2.5 c black beans (1 can)1 c corn kernels (frozen or fresh)2 eggs1 tsp cummin2 tsp oregano or parsleysalt and pepper to tasteAdd cooled onion/celery/garlic. Pack into a loaf pan and bake for 30-40 mins @ 350F
8 servings per loaf. serve with salsa on top.
