Italian Sausage Soup

1 pound mild Italian sausage, castings removed.1 cup chopped onion1 clove garlic, minced5 cups beef broth1/2 cup water1/2 cup red wine (essential)4 large tomatoes -- peeled, seeded and chopped1 cup thinly sliced carrots1 1/2 teaspoon packed fresh basil leaves1/2 teaspoons oregano leaves1 (8 oz.) can tomato sauce1 tablespoon chopped fresh parsley
Remove castings from sausage and brown
Saute' onions and garlic in drippings. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage. Bring to a boil reduce heat; simmer covered for 30 Minutes.
Sprinkle with parmesan cheese on top of each serving (if desired). makes 6 - 8 servings
