Chicken Fried Rice - Benihana Style

Ingredients
4 tsp canola oil2 eggs, beaten2 tbsp chopped onion2 tbsp chopped green onion2 tbsp chopped carrots4 cups steamed white rice1 cup chopped cooked chicken breast1 tsp sesame seeds3/4 tsp salt (optional)1/4 tsp black pepper2 tbsp butter4 tbsp soy sauce
Directions
Heat a 12-inch nonstick skillet or wok over medium heat. Add 1 tsp of oil and scramble the eggs until firm. Remove from the pan and let them cool; then chop the eggs and reserve.

Meanwhile, add the remaining 1 tbsp oil to the pan, and raise the heat to medium-high. Saute the onion, green onion, and carrots until tender - about 2-3 minutes. Mix in the rice, chicken, and chopped eggs. Add the sesame seeds, salt, and pepper stirring well. Add the butter and soy sauce to the mixture, stirring until well combined.
