Pepperoni Pasta

Ingredients
4 oz. Pepperoni, shredded16 oz. Rotel16 oz. Tomatoes, crushed12 oz. Pasta of choice1/2 c. Colby Jack cheese, shredded2 Tbl. Italian seasoning
Directions
Add pasta to boiling water, cover and set aside for 20 minutes. Drain and add Rotel, tomatoes, Italian seasoning & Pepperoni.
Stir gently but well and simmer for about 20 minutes stiring occasionally so it doesn't stick. Once most of excess liquid cooks out serve with sprinkled shredded cheese on top. Wonderful with garlic bread and a side salad.
