Ingredients
Ingredients:Eggplant, fresh, 2 cup, cubes *Green Onion (1 Green Onion), 0.25 cup Olive Oil, 2 tbsp Peppers, sweet, red, raw, sliced, .12 cup *Kroger Cornbread Stuffing mix UNPREPARED, 0.5 cup
Directions
Stir fry eggplant, onions, and peppers. Add to 1/2 cup water to 1/2 cup cornbread stuffing mix. Bake at 350 for 20-30 minutes til brown.
