Mashed-Potato Parmesan Pancakes

Ingredients
2 cups mashed potatoes1 large egg1/4 cup parm cheese1 0z bread crumbscoarse salt and ground pepper1 tea veg oil
Directions
Stir together potatoes, egg, bread crumbs & parm cheese. Season w/ S&P & mix together well. In large non stick skillet heat veg oil over med-high heat. In bathces drop heaping spoonfuls into skillet pressing w/ a spatula to flatten. Cook until golden brown about 3 mins, flip & cook 3 mins again.
