Tarka Dhal

Ingredients
250 g chana dhal, rinsed1 L water1T vegetable oil1 T cumin seeds1 small onion, chopped3-4 whole green chillies2 cm fresh ginger3 garlic cloves and 1 tomato, puréed together¾ t turmeric¼ t masala1½ ground coriander Salt and pepperCoriander, chopped
Directions
Serves 8

Method
Cook lentils in water for 35 - 40 mins. Whisk to break down lentils.

Flash fry Cumin seeds 20-30 seconds. Add onion chillies, ginger and tomato purée.

Add ground spices and 100 ml water . simmer for 15-20 minutes.

Add cooked lentils to sauce. Adjust with more water to thickness desired. Add salt and pepper to taste. Top with chopped coriander.
