Mini omlettes

Ingredients
2 cups Egg Beaters2tbsp 1% milk1/4 tsp kosher salt1/4 tsp ground black pepperChopped tomato, onion, green bell pepper, baby spinach and pastrami slices
Directions
Makes 12 mini omlettes

Preheat oven to 350F. Coat standard size muffin pan with Smart Balance cooking spray.

Mix Egg Beaters, salt, pepper and milk together and pour into prepped muffin pan. Add the chopped veg and meat to each. Bake in the oven about 20 minutes or until mixture is set. If using "wetter" veggies such as tomato or anything frozen and thawed it may take a minute or two more to bake.

Can be made with any combination of veggies, meats, and cheeses (no cheese in this recipe however.). Can be made completely vegetarian of course by leaving out the meat. Reheat in the microwave for 15-20 seconds and enjoy!
