Kale Soup

1 TBSP Olive Oil4 cups chopped kale1 medium onion8 cloves garlic4 cups low fat chicken broth2 cans white beans (cannelli or navy)4 plum tomatoes choppedItalian herb seasoningsalt/pepper1 cup parsley
In a lg. pot, heat olive oil. Add garlic and onions - saute until soft.
Add Kale and saute, stirring until wilted
Add 3 cups of the broth, 2 cups of beans and all the tomato, herbs, salt and pepper
Simmer for 5 minutes
In a blender or food processor, mix the remaining beans and broth until smooth.
Stir into soup to thicken.
Simmer for 15 minutes
Sprinkle with chopped parsley
Makes approx. 10 (1 cup) servings
