salmon curry

Ingredients
Organic Salmon 1 fillet (approx. 180 gms.)coconut milk 2 tbsp. (Use more if you are using a low fat version)ginger- 0.5 tspgarlic - 1 tspchillie - optionalonion - 0.25 cup choppedtomato- 0.25 cup choppedsalt - according to tasteoil - 1 tsp.curry leaves - optional
Directions
Cut salmon into small chunks. Heat oil, add ginger-garlic-chillie paste, curry leaves and onion, fry for 3-4 mins. Then add tomatoes and fry for another minute on slow fire since we are using very less oil. Add salmon, coconut milk and salt and let the curry simmer for 7-8 mins. Add water if necessary.

The same recipe can be used to make chicken, beans or vegetable curry.
