Low Fat Mac & Cheese

Ingredients
1 Cup Fat Free Sour Cream1 Cup Fat Free Cottage Cheese (or you can use skim ricotta, same amount)1 Cup Low Fat Cheddar (Use less if desired)1/4 Cup Skim Milk4 servings of pasta ( I use dreamfields, .75 cup dry per person)Season to taste ( I love pepper, paprika, garlic and a dash of salt)
Directions
Cook pasta according to package. Set aside.

In a saucepan, add all other ingredients and bring to a boil. When blended, they should make a nice creamy sauce. Add more milk if needed, and if you want a smoother consistancy, food process the cottage cheese before putting it in.

Mix together the pasta and cheese sauce!

I eat this as a meal for lunch or dinner on nights when I want a cheesy fix :D
