lower fat chicken enchilladas

Ingredients
6 boneless skinless chicken thighs (cut into strips)2 bell peppers (strips red/green)1 small oniongarlic1-2 tbsp of cooking oil 1 can of refried beans4 tbsp or salsa con queso dip and 2 tbsp of sour cream1/2 cup of shredded cheesecilantro/diced tomatoes and spices to taste
Directions
preheat oven to 350
Saute onions, peppers and garlic until softened in oil. Add chicken, cilantro, corriander, chili spices etc. Saute chicken until cooked (approx 8 minutes). Add 4 tbsp of salsa and can of refried beans and stir until well blended.
Fill each of the tortillas with little of chicken mixture and roll up and place in casserole dish.
Mix salsa con queso dip and sourcream and spread over top of tortillas. top with cheese if desired and chopped tomatoes. Bake in oven 30 minutes.
Serve with spanish rice!!
