Andrea Metcalf's Naked Fitness Tortilla Soup

Ingredients
1 c chopped carrots1 c chopped onions8 cups chicken broth8 6" corn tortillas (not fried), chopped in pieces1 12oz can black beans, rinsed and drained1 Fajita spice packet OR 2Tbsp each: cumin, chili powder, cilantro12oz grilled chicken breast (no skin), chopped
Directions
Grill chicken breasts, chop. Lightly oil (spray) large soup pot. Add carrots and onions, cook for 3 to 4 minutes. Add chicken stock and cut up corn tortillas. Bring to a boil and let cook 20 minutes until tortillas dissolve in the soup. Add the salsa, rinsed beans, and seasonings. Add cut up chicken breast. Separate into approx. 5 2-cup servings. (Use reduced sodium broth if watching sodium intake.)
