Vegan borlotti beans salad

Ingredients
3-4 stalks celery (washed and sliced)5-6 cherry tomatos (washed and quartered)1 red pepper (washed and de-seeded_1 small shallot onion (finely diced)1 tin of borlotti beans in water (drained)1tbsp apple cider vinegar1 tbsp Omega 3/6/9 oil2 tbsp lemon juicepinch of splenda1/2 tsp salad herbssalt & pepper to taste
Directions
Makes 4 small or 2 larger servings (lunch size portion is 2 servings)

Mix all the ingredients in a large bowl
Let it infuse / rest in the fridge for at least 30 min.
