Dairy-free Whole Wheat French Toast

Ingredients
- 2 slices whole-grain wheat bread- 1/4 cup soy milk- 1 medium sized egg (omit the yolks to make this healthier if desired)- Pinch of salt and vanilla extract- Fruit and maple syrup, to taste (not included in nutritional info)
Directions
In a small bowl, whisk together soy milk and egg. When combined, add a pinch of salt and vanilla.

Heat a non-stick frying pan on medium-low. When pan is warm, dunk slices of bread in egg mixture for a few seconds, and add to pan immediately. If any egg mix is left over, spoon it on top of bread slices in pan. Flip bread slices midway through cooking to ensure both sides are browned and cooked through.

Serve with 1/2 cup fruit and maple syrup to taste. Makes 1 serving
