Lemon Mousse

Ingredients
Fat free evaporated milk, lemon juice, lemon rind, splenda
Directions
Empty the evaporated milk into your mixing bowl (if you have a stand mixer use it's bowl) and place the bowl in the freezer for about 30 min. When you remove the bowl there should be a bit of frozen milk around the sides of the bowl. With the whisk attachment or a hand mixer on meduim high beat the evaporated milk until it triples in volume. Next add the splenda, lemon rind and lemon juice and mix to combine. Transfer the mixture into a freezer container and freeze for 1 hour. Scoop and serve.
