Old Fashioned Bake Beans

Ingredients
2 c black-eyed peas, dry, sorted and rinsed1 medium onion, chopped1 ham hock4 slices peppered bacon2/3 c sugar free syrup2 t salt1 t ground mustard1/2 t ground pepper4 c water
Directions
Place beans in a bowl covered with two inches of water and soak for at least 8 hours.

Preheat oven to 300 degrees.

Drain peas and put in a large pot on the stove. Add the rest of the ingredients and bring to a boil. Tightly put the lid on the pot and transfer to the oven. Cook for 2 hours, then remove the lid and cook for another 1 to 1 1/2 hours until the liquid is absorbed.
