1/4 cup frozenchopped spinach1/4 cup finely chopped mushrooms1/3 cup fat free rocotta cheese2 tsp Parmesan cheese1 tsp chopped garlicdash nutmegdash salt and pepper2 raw boneless skinless chiken breast cutlets3/4 cup canned crushed tomatoes1 tsp dried minced onion1 tsp dried Italian seasoning1 stick string cheese
Makes 2 servings (can be doubled, tripled etc)
Preheat oven to 350 degrees
Place spinach and mushrooms in microwave bowl and microwave for 1 minute until soft. Blot, removing excess liquid. Add ricotta cheese, Parmesan, 1/2 tsp garlic, nutmeg, salt and pepper. Mix and set aside.
Place chicken breast cutlet in large sealable plastic bag and carefully pound with a meat mallet until 1/3 inch thick. Repeat with all cutlets (could use a regular chicken breast-just pound thin)
Lay out chicken one at a time and spread evenly the veggie-cheese mixture. Roll up and secure with a toothpick.
Place in a baking pan sprayed with non-stick spray. Cover with foil. Bale 20 minutes
Combine tomatoes, onion, 1/2 tsp Italian seasoning.Set aside. Grate string cheese.
After 20 minutes remove chicken from oven, remove foil, Spoon tomato mixture and sprinkle with string cheese. Return to oven uncovered for 15 minutes or until chicken is done.
