Easy chicken Cacciatore

4 boneless, skinless chicken breastssalt and pepper2 tbsp olive oil1 medium onion, chopped fine1 red bell pepper, seeded and chopped8 ounces cremini mushrooms2 garlic cloves1 (14.5 ounce) can of diced tomatoes1/4 cup of red wine1/4 cup of fresh chopped basil
1. pat chicken dry season with salt and pepper. Heat oil in skillet and cook until golden brown on both sides, about 5 minutes each side. Transfer to plate.
2. add onion, bell pepper, and mushrooms to skillet and cook until lightly browned, about 8 minutes. Stir in garlic and cook till fragrant, 30 seconds. Add wine and diced tomatoes, crapping up any brown bits, then add chicken and bring to a boil. Reduce heat and cover and simmer until chicken is cooked through, about 2 - 4 minutes.
3. Transfer chicken to platter and tent with foil. simmer sauce uncovered until slightly thickened, about 5 minutes. Stir in basil and season with salt and pepper. Pour sauce over chicken and serve.
