Better Than Ever Banana Pudding

2 pkgs. Fat-free, sugar-free instant vanilla pudding4 c. skim milk8 oz. fat free sour cream12 oz. Cool Whip lite (reserve 2 cups for topping)64 Nilla Wafers (reduced fat)5 large ripe bananas (soft with darkening skin is best)
Pudding mixture is best prepared several hours to 1 day before serving and complete recipe should only be assembled 1-2 hours before serving. Assembling immediately makes the wafers soggy.
Day 1.
Mix pudding with milk until smooth. Mix in sour cream and cool whip lite (minus 2 cups for topping.) Refrigerate until pudding is set, (20-30 minutes or overnight)
Day 2 or 1-2 hours before serving.
Line 9 x 13" glass dish with Nilla Wafers, then sliced bananas, then pudding mixture until there are 3 complete layers of each. Top with remaining Cool Whip and serve. Serves approx. 10- 1 cup servings. Enjoy!
