Spinach, Pine Nut and Sultana Stir fry

Ingredients
Serves 41 tablespoon olive oil900g spinach, washed and shredded2 garlic cloves0.5 teaspoon ground nutmeg50g pine nuts50g sultanas1 tablespoon lemon juicesalt and pepper to taste.
Directions
Serves 4

Heat the olive oil in a large pan and stir fry the spinach in handfuls until it is all in the pan.

Add the remaining ingredients and stir well.

Cover the pan and cook for about 5 minutes or until the spinach is just tender.

Season to taste and serve hot.
