Mujadara: Rice, Lentils & Carmelized Onions

1 c. lentils5 whole onions, sliced3 1/2 c. water1 c. white rice1 t. ground cumin1 t. salt1/2 t. pepper2 T. olive oil
Slice 1 onion and carmelize in 1 T. olive oil. Add lentils, water, salt and pepper and bring to a boil. Turn to a simmer, cover, and simmer 20 minutes. Add rice and cumin, bring back to a boil, turn to a simmer, cover and simmer another 20 minutes. Meanwhile put remaining tablespoon of olive oil in a skillet, add remaining 4 sliced onions and cook until fully carmelized and beginning to blacken. Combine.
