Chicken Club Croissant

Ingredients
2 Cans Pillsbury Reduced Fat Croissant Rolls.75 lb boneless skinless Chicken Breast6-7 Slices Reduced Fat, Low Sodium Bacon1/3 Cup Shredded Cheddar Jack Cheese2-3 Tsp Dijon Mustard1-2 Tbsp Low Fat Mayo with Olive Oil
Directions
Preheat oven to 400 -
Crisp bacon in oven for about 10 mins. (spray your pan & it won't stick)
When done, remove & let cool while preparing other ingredients.

Spray a pan & heat to medium to brown chicken.
Flavor your chicken with salt & pepper on both sides.
Brown about 4 minutes on each side.
Remove from heat & cut into small bite sized pieces.
Put in a Medium mixing bowl.

Add Cheese, mayo & mustard & mix to coat chicken.

Separate croissant rolls onto a baking pan.
Spoon chicken/cheese mix onto large end of each roll.
Crumble 1-1.5 pieces of bacon over each sandwich.

Roll dough to cover filling and seal large open areas.
Cook 11-13 minutes or according to package instructions.

Makes 16 medium sized sandwiches. Servings calculated for 2 rolls per serving.
